Yes, I am still yet holding on. I decided to dust off a panini press that we received for Christmas a few years ago. It is a shame that we have not used it sooner.
On my quest to have a good, hearty sandwich I could not help but recall my days of eating out. I went to a local grocer (no longer in business) and would indulge in a veggie panini. Because I cannot simply ride over there and grab one, I decided to give it whirl on my own. The results were yummy!
Ingredients
- Wide Pan Flax bread
- Sliced Zucchini (long way)
- Daiya Mozzarella Shreds
- Dijon Mustard
- Salt and Pepper
- Sliced Red Bell Pepper
- Sliced Onion
- Earth Balance Soy Free Buttery spread
- Baby Spinach
Steps
- Assemble your sandwich.
- Spread on butter.
- Place butter side down.
- Spread butter on other side.
- Close panini press.
- Check occasionally for crispness.
- Remove and devour.
Results
The panini was soooo good! I made four of them in a row to prep for my lunch during the week. My husband even enjoyed his bite. I later made a salmon panini for him and a chicken panini for my fifteen-year-old. I think we’re onto something!
